while “too many leftover cookies” aren’t a problem for many of us for me they are a problem because I eat one too much once and I can’t see them anymore. If it is happening that you find yourself with and excess of holiday cookies which are also going stale in no time, keep them and use them smart. How? Keep reading to find out what to do with leftover cookies.
My favorite way to use them is to make a yummy holiday dessert with them. For example a cookie crumb pie crust cake, cookie croutons, smoothies or make a trifle with the crumbs. I mostly tend to use them as crumbs in a trifle because you can make so many different creams and use even more fruits in between, that you can make a different one every day.
Today I’m sharing my favorite holiday trifle with you guys, my friends call it an upside down tiramisu. My friends doesn’t like blueberries that is why I made hers with grapes.
Vanillekipferl with coffee cream trifle
– 1 cup mascarpone
– 1/4 cup coffee
– 2 tbsp sugar
– 2 tbsp milk
– some grapes and blueberries
Now put the Vanillekipferl in a zip-lock bag and smash them with a hammer/pan/rolling pin. Be careful and make sure you leave the crumbs a little bigger so you have a little crunch when you eat the dessert.
Depending on the fruit you use wash them and cut them in smaller pieces.
Now prepare the tumblers. Start layering with the cream, next use the crumbs and then add the fruits and so on until you have reached the height you want. Tada, the trifle is done and ready to eat.
