let’s be honest here right away, snacking in between meals is our weakness. At least it is mine and I’m not shy to tell you that as well. I try not to mindlessly snack during the day but when I do snack I often lean toward protein and healthy fats to fill me up.
On my long road of losing weight and finding my inner self I also discovered that there are a few things I can eat and they keep me pretty full for a couple of hours and I don´t even think about food once. One of my go to protein rich snack is eggs, fried, boiled or scrambled. Tho these days I make sure to get half a dozen and boil them right away, makes snacking way easier and when you need something fast just grab and eat.
Sometimes when I have things at home I need to eat before they get bad I get creative and a couple of days ago I had a ripe avocado on my counter which was already very soft. Because it was snack time I thought about a way to add the avocado in an exciting way to my eggs. Every body can eat eggs and avocados separated but who can mix them together and make them fancy? Right, me.
With St. Patrick’s day right around the corner it fits also the green theme and when you need something to bring to a friends house or you need something at home because friends are coming over try out this yummy recipe: avocado deviled eggs. Believe me when I tell you I ate 3 eggs right away, that is how yummy it was.
Avocado deviled eggs
– 1 tbsp yogurt
– 1 avocado, mashed
– 1/2 onion, diced
– 1/2 tsp mustard
– salt, black pepper, paprika
When cooled down cut in half, lengthwise and remove yolk. Put yolk in a bowl, add the remaining ingredients. Taste and adjust seasoning as needed.
Use a piping bag to place fill each half. Top with the toppings of your desire and enjoy them.
