ever since I received the matcha from Kissatea I´m addicted and can’t get enough of it. Every smoothie, yoghurt with fruits or sometimes even Crepes have to be green these days. Me, the always skeptical about matcha is addicted to it now, hard to believe but true and super yummy. I always like to try and figure out what else I can do with new things I just discovered and I found out that my beloved crepes tastes amazing with Matcha added and the best thing about it they look amazing in green.
It may take a bit of time if you are not used to make crepes and assemble the layers of the ‘cake’ besides that the recipe is easy and the ingredients are simple, not many utensils are needed and you don´t need to turn on your oven. After the first 2-4 matcha crepes you should be a master in it and trust me, learning how to make crepes is the first step to your career as a chef in your kitchen.

Healthy Matcha Crepe Cake
– 1 cup flour
– 2 eggs
– 1 cup milk
– 1 tbsp oil/butter
– 2 tbsp sugar
– 2 tsp matcha
– 1 cup heavy cream
– 1/2 tsp vanilla extract
– 1/3 cup powdered sugar
Place a non-stick pan on the stove over medium heat. Use a cooking brush to apply some oil or a non stick spray. Use 1/4 cup to scoop onto the pan the batter and swirl the batter around on the pan. When done, slight golden brown on each side, place them on a wire rack until cooled down. Repeat until all batter is used up.
In a large bowl, beat the powdered sugar, vanilla extract and cream until the whipped cream has reached soft-to-medium peaks.
Begin assembly. Lay a crepe on your plate and spread a layer of whipped cream on top. Use and ice cream scoop or a cup to help you portion it. Start in the middle and spread the whipped cream just to the edge. Repeat until you’ve used all your crepes. If it takes you some time place the cake in the fridge or freezer in between because when the cream gets warm it slips and slides away.
When done place in the fridge for at least 1 hour and after it is ready to serve.
