now that we have the holidays here most of us are always looking online for some inspiration what to cook and eat. If you are a little bit like me you hate to eat the same over and over again.
In my family we have many different typical meals we eat for special occasions but with the time and with me moving out from home I had to adjust a lot and I also changed some of them to my liking. If my parents would add a cream sauce I add a light sauce or no sauce at all. Sometimes I really liked something but still wanted to try it in a different way and see I like it even more. At the end everything with food is a trial and error and learning phase. You never know what you like if you didn’t try it.
One of those many meals I want to share with you today. I would say this is one of my favorite and my friends love it as well. Always remember if you see meat that is for my friends, I have the same without the meat. Nothing extra made for me just without.
Stuffed turkey breast with red cabbage
Servings: 4 portions Nutritional facts: 420 calories / 13,4 g fat / 48 g carbs / 25 g protein (with meat)
– ½ onion
– salt, pepper, sugar
– 2 tbsp vinegar
– 1 tbsp butter
– 1 cup water
First cut the red cabbage into thin slices and put aside. Now the apple and the onion need to be sliced into small cubes.
In a pan heat the butter, add the onion and apple cubes. When golden brown add the cabbage and let cook down for about 5 minutes, after pour the water and let cook for another 10 minutes.
Season with salt, pepper, sugar and vinegar to your liking. If you want it a little fruitier add a splash of orange or apple juice. Serve hot or cold.
– 4 cups bread cubes
– 1 tbsp parsley, dried
– ½ onion
– 2 tbsp butter
– 2 cups milk
– 2 eggs
– 2 tbsp flour
– salt, pepper, garlic
Cut a pocket in the turkey breast and season it with salt and pepper. Put aside for now.
Slice the onion in little cubes. In the same time melt the butter in a pan, when done add the onion and bake till golden brown. Remove from heat and let cool down.
In a bowl mix together the bread cubes, milk, parsley, eggs, flour. Season it with salt, pepper and garlic. When the right taste add the onions and set aside fro 10 minutes to let it rest.
Now fill the turkey breast pockets with the stuffing. Make sure you don´t put too much in it because the breast will shrink during cooking. Now heat some oil in a pan and place the breast in it. Grill on both sides until golden brown.
In the same time heat oven to 400 degrees. When both sides golden brown place pan in oven for 20 minutes.
For the vegetarian version bring some water to boil. Form small dumplings out of the stuffing and cook for 10 minutes. Make sure the water isn´t cooking and only hot.
Now serve the meat with the cabbage and enjoy a yummy meal.
For me that meal reminds me of some great times with my family. When I smell the red cabbage the feelings of joy, happy, comfort and relaxed are coming over me. Normally we had this meal around the Christmas time. Which means one of our parents stayed home and cooked and the other parent or our grandparents took us on a little adventure. For example sledging, horse carriage rides, to a Christmas market, etc and after our return we would eat an early dinner. After dinner we would play card or board games. When I think about the holidays this is what I think about. Family spending time with each other and not the presents or something else.
