at the moment recipes have to be quick and easy for me because my work hours are all over the place and especially after a 10 hour work day no one wants to cook anymore. I never tried to make a quiche before but my mom mentioned quiches many times when I met her the last couple of times so I thought why not.
But first, what is a quiche? Quiche is an egg and milk custard filled with all sorts of extras like cheese and veggies. Traditionally, quiches are baked in a pie crust. The key to prevent your quiche to be soggy is to reduce the moisture in your vegetables.
After what my mom told me I loved all the positive aspects. She said the recipe is for 4 portions but I portioned it into 7 and I´m full with one of them. Makes it perfect for meal preparation and a good nutritional aspect. It is easy to make, tastes super yummy, can be eaten cold, room temperature or warm and can be made with out the crust.
For people who want to add other vegetables or some protein have it super easy with that spinach quiche because spinach fits to almost everything. I have seen recipes with cheese, bacon, meat, mushrooms and carrots.

– 100 g butter
– 1 egg
– pinch salt
– 750 g spinach
– 1 onion
– 1 garlic glove
– 250 g feta
– 3 eggs
– 150 g sour cream
– salt, pepper
Pour the flour, butter (melted), egg and salt in a big bowl. Knit the dough with your hands until everything is combined. Cover with a kitchen towel or cellophane foil and place in the fridge for 30 min.
Cut the onion and the garlic into small pieces. Heat some oil or butter in a pan and add the small pieces and the spinach. Wait until the onions are soft and put it aside to let it cool down.
Pre-heat the oven to 350 F or 180 C. Now prepare the baking tin, add some non stick spray or some oil to the bottom and the sides.
Take the dough from the fridge and use a rolling pin to flatten it out. Place the dough now into the baking tin, with a fork make some holes into it. Bake for 10 min.
In the same time whisk together the eggs, sour cream, salt and pepper. Here you can add more salt and pepper than you are used to because with all the spinach you lose a lot of taste. Cut the feta into small pieces.
Add the spinach into the baked dough and pour the egg cream over it. Top it off with the feta cheese and bake for 25-30 minutes.
