when I’m at home I have the chance to get spoiled by my parents and especially my mom. Even tho I plan to cook for us all and make something delicious I always end up being a little bit to slow and they are always in the kitchen first. When you guys would see our kitchen you would be amazed sometimes what magic we use to make yummy food and 3-4 course menus. But at the end it is the best preparation for my Plan B. Plan A did not workout and next up is Plan B. When the time comes I will tell you what Plan A and Plan B are all about. I can hint you as much as it involves traveling and being a small globetrotter.
Almost a week ago my dad and I went Nordic Walking in the morning and we took our time, 2 hours and my mom decided to welcome us with some delicious matcha waffles which was awesome. Who doesn’t dream about coming home to a homemade breakfast? Let me tell you I enjoyed every bite and the good conversations we had over them. But now enough said, let’s bring it on.
PS.: The recipe is the base we always use but we make sure to add something special every time.
Mom’s waffle recipe
– 200 g Greek yogurt
– 4 tbsp birch sugar
– 1/2 tsp vanilla extract
– some salt
– 200 g flour (spelt flour mixed with chick pea flour)
– 1 tsp baking powder
– 2 tbsp milk
– 2 tsp matcha powder
– sparkling water
Let rest for 5 minutes. Take the waffle iron out and add a little oil on top and bottom, makes it a little easier to remove waffle when done. Continue until all the dough is used up. Serve them with some fruits and some other toppings like honey, peanut butter, etc.
