every year I can´t wait for this time of the year. Which time are you asking yourself now?!? I´m talking about the fall time and especially about pumpkins. At my home we start as soon as the first pumpkins on the fields are ready. We cook and bake with it and make drinks with it.. our newest thing is making jelly with it. Just imagining your face right now makes me laugh but believe me it is really good.
We are such big fans of pumpkins because they have a great taste, are very diverse in the way you can use them and have nutrients. I like to eat them because they contain 90% of water and they are a great solution for people who want to lose some weight before all the holidays. The pumpkin contains 25 kcal per 100 g of it and a lot of vitamins and minerals. Which are important for hair and nail grow as well as for good skin. The nerve system will thank you as well.
Which reminds me of one of the most famous specialties from Austria, pumpkin seed oil, which I love to add my salads as well as to my vanilla ice cream. The oil is green and stains are hard to remove, the unique taste isn´t for everybody but it is really healthy.
Of course my family has a lot of recipes we cook every year and hand down to the next generations. I´m sure by now we could make a fall cook book with family recipes. I believe the oldest recipe is from my great great grandma. We like to make grilled pumpkin, pumpkin chili, quiche filled with it and sweet potatoes, in a soup with curry and ginger, cakes and muffins. Newest addition is pumpkin apple yam.
Pumpkin Hash Browns
Pumpkin Curry Soup
Servings: 4 portions Nutritional facts: 190 kcal / 5 g protein / 8 g fat / 12 g carbs
– 1 onion, cubes
– 1 1/2 cups potatoe, cubes
– 1 garlic glove, smashed
– 1 tbsp butter, melted
– 5 cups vegetable broth
– salt, pepper, curcuma, curry, red pepper flakes
– Pour the broth into the pot and let it simmer for 30-40 minutes. Try if pumpkins are soft.
– When soft blend the soup in a food processor and pour back into the pot. Season with salt, pepper, curucma, curry and red pepper flakes.
– Cook for another 5 minutes and serve it hot.
